It feels like an absolute age since I last did a recipe post. That’s not because I haven’t been cooking, if you follow me on Instagram or Twitter you will very definitely know that’s not the case, I just seemed to unintentionally focus on reviews towards the end of last year.
I follow a fair few food blogs but there is only a handful which I really look forward to popping up in my blogger newsfeed and whose recipes I am inspired to road-test. Other than Recipe Rifle (my absolute fave) No-one has ever actually recommended a food blog to me, so when doing research for my own I searched Google for popular food blogs and if I liked them I’d see which bloggers they followed. This was in fact how I came across Look who’s cooking too the blog from which this recipe originates.
I absolutely adore fried chicken but loathe the deep-frying aspect of it and the inevitable mess that it creates, so when I came across this healthy(ish) spin on one of my favourite junk foods I pounced immediately.
I followed their recipe pretty much verbatim other than I didn’t have one of the types of chilli powder to hand so just doubled up on the other. They recommend that you pre-heat the oven to 220 and cook for 25 minutes but I would say 200 for 35 mins as I followed the instructions exactly, and some of the larger pieces of chicken were fairly dark on the outside but still pinker on the inside than any poultry should be when about to be consumed.
