Recipe: Potted Shrimps on crumpets with cucumber salad

I feel like this may seem like a bit of a cop out as a recipe post as it’s SO simple, and I didn’t make my own crumpets, you could if you wanted though, there’s a fairly straightforward looking recipe on the BBC food website, but I personally couldn’t be arsed.

This was my very first meal of 2015, and when I posted the photo above on instagram etc (obvs) it got a lot of love, and requests for a recipe post- so here you are.

I very loosely based it around this recipe (also from BBC food) but I omitted the curry powder and garam masala, as I wasn’t in the mood for those flavours, so added some nutmeg instead. I also didn’t ‘pot’ it, so mine’s a lazy/cheat’s/deconstructed version

I found the brown shrimps in Waitrose, I think they were £4- fairly pricey, but very much worth it. It’s definitely not low fat, so perhaps one for a weekend brunch or treat. It’s very rich but the crisp and tangy cucumber salad balances it out a treat.

For the shrimp
I melted about 100g of butter (I know) with the spices 1/4 tsp each of smoked paprika, nutmeg, hot chilli powder and ground ginger until bubbling then took off the heat, added the shrimp and gave it a stir to combine and gently warm them in the melted butter.

For the cucumber salad
Take half a cucumber and remove the skin in strips with a vegetable peeler. cut in half, scoop out the seeds with a teaspoon and then slice into thin half moons. Mix 50ml of olive oil with a splash of white wine vinegar in a bowl then add the cucumber slices and tops in the dressing. Season to taste.

    I can't remember what my first meal of the new year was, actually it was a slice of bacon at 12.01am which doesn't really count but this looks amazing and definitely one I would like to try! Maybe this weekend. Thanks for the recipe/recommendation! 😀
